The Best Cheesecake You'll Ever Have

This Lemon Blueberry Cheesecake has been THE favorite dessert in my family for over 5 years and it's hands down the best cheesecake I've ever had, anywhere. It's light, creamy, fresh and clean... adjectives you don't often attach to a cheesecake. The trick is to treat the cheesecake like a custard, not a cake: baking the cheesecake in a water bath evenly distributes the heat and keeps the cheesecake in a moist baking environment. It makes a world of difference. In terms of desserts, it's a little more labor intensive than your average from-scratch pie or cake, but it's impressive and has a fantastic flavor (even when I messed up the consistency).

If you really want to let the flavor sink in, let it sit in the fridge for an extra day...I swear, the day after we cut into it, it's always better.
